Wednesday, Jan 11, Nachos

Neighborhood meeting runs late into the evening. I need food, and fast. I run up to the store and grab some food for Alma. I consider take and bake pizza, but I just can't. I also don't have the patience to wait on take out Thai. I grab organic yellow corn tortilla chips and some organic salsa. Also, some cheese (not organic, sorry). I get home, turn on the TV to try to catch the last half of Lost, and preheat the oven.

Here is my method for nachos...

-Preheat the oven
-On a plate, create a mound of tortilla chips
-Sprinkle on a generous amount of cheese (it holds the toppings to the chips)
-Add toppings (tonight: onion, red pepper, salt, oregano)
-Bake for around 7 minutes, or until cheese is completely melted and slightly browned
-Slide the whole mess from the plate that was in the oven onto a cool, virgin plate
-Dip or spoon salsa onto each chip (if you add salsa to the top, chips get soggy)

With more time, I would have made my own salsa, cooked some jerk chicken, chopped more fresh veggies, etc. As it was, not too bad. To drink, a bottle of Bridgeport IPA. I didn't get to see lost, but I did see Good Eats about vanilla beans. Man, that is a good show.
