Tuesday, Dec 27 - Veggie Green Curry

I made a batch of green curry past on Monday, and used it tonight to make veggie green curry. The paste consisted of cilantro, serrano peppers, lemongrass, garlic, lime juice, coriander, cilantro, and salt. I only have a crappy little 'chef's chopper' so the paste ended up more chunky than smooth. Any one have suggestions? Would a bigger, full size food processor have been better? HELP!

So, last night, I throw on a batch of jasmine rice and get to work on the curry. Olive oil in a pan, when hot, I throw in chopped onions and a little salt and saute until softer. Then, I mix in 2 tablespoons of the 'paste' and stir. Once it starts to sizzle, I pour in a can of coconut milk and crank the heat. I taste it, and it isn't spicy enough, so I toss in another tablespoon of 'paste' which seems to do the trick. Once it begins to thicken, I toss in some red bell peppers and snow peas, and pour over the rice, and chow. To drink, Lagunitas IPA.
