Monday, Dec 26 - Calzone

Picking up a friend from the airport later. Horizonair.com shows the flight arriving late. I had planned to whip up some green curry for my friend upon their return, but they are going to eat at the Seattle airport during the wait. I had a little pizza dough left, fresh mozz, and ricotta too. I chop up a bit of onion and tomato, mix in some salt, pepper, oregano, and red pepper, and preheat the oven.

Roll and toss the dough in the air, dusting the counter and floor with a light layer of flour. Toss the dough on the pizza stone, spoon the filling onto half, fold, seal, and press. 10 min in the oven gives me just enough time to whip up a little tomato/cuke salad (olive oil, white vinegar, dill, oregano, salt, and pepper). Also, heat up a little tomato/basil/cream sauce to top it with.

Water to drink. Sorry the photos are so dark. I really hate the flash, and didn't want to crank the lights up in the house.
